A Healthy Watermelon Slushy

A Healthy Watermelon Slushy

Who says we have to say goodbye to summer so soon? There are many delicious varieties of watermelon still available and still perfectly ripe! And we all love a slushy no matter how old we are! This recipe will bring you back to your childhood and guaranteed it will make you stop what you're doing, sit out on the front porch with your kids and entirely relax.

Watermelon is 92 percent water, so it’s the perfect option to add to your daily hydration plan. It's also high in the antioxidant lycopene, which has been linked to a reduction in the risk of certain cancers. Let's not forget it's perhaps the biggest crowd pleaser at a picnic because it's simply delicious!

Tip - If you have any leftover slushy, freeze it in paper cups to turn it into a watermelon-water ice!

Watermelon Slushy

  • ½ cup very cold water
  • 10 Strawberries
  • 2 tbsp juice from a lime (freshly squeezed is best)
  • 2 cups seedless watermelon, cubed
  • 1 cup Ice cubes (divided into ¼ cup portions)
  • 1 tbsp organic honey (you may substitute agave nectar)

Combine all ingredients into NutriBullet and Blast. Note: you will need to do this in batches since the watermelon starts out quite bulky, but Blasts down to a watery consistency quickly. With every batch you Blast, add one additional ¼ cup portion of ice. It'll soon become a slushy!

Once you have the desired consistency, pour into tall glasses and garnish with a thin slice of watermelon and a mint leaf!
