It's my choice to avoid gluten - I feel better when I do and, after a cancer diagnosis, I don't want to risk my health eating it if I don't have to. For some of my friends, it's not a choice. When someone with this disease consumes something containing gluten, it causes damage to the lining of the small intestine. This makes food absorption very difficult and painful. It's life changing for many people and, if left undiagnosed, can lead to serious illness.
