Dressed or Undressed?

Do you like your salads dressed or undressed?

Salads are a fabulous way to incorporate multiple servings of vegetables. Unfortunately, if you are using cream-based dressing or no dressing at all, you may not be absorbing all the nutrients that are available to you. There are four vitamins that are fat soluble vitamins. This means that they require fat in order to be absorbed. These four vitamins are vitamin A, Vitamin D, vitamin E and vitamin k.

Below is a chart of foods that are high in these vitamins.

If you combine some vegetables seen above into a salad would advise you to dress the salad with a olive oil based dressing so as to absorb and assimilate the fat soluble vitamins as best as possible. My favorite olive oil based dressing is light and flavorful without taking anything away from your favorite combination of veggies.

Roasted Garlic, Basil and Arugula Vinaigrette


  • ½ cup Olive oil
  • ¼ cup white balsamic vinegar
  • 5-10 tbsp water*
  • 1 tsp sea salt
  • 1 tsp coarsely ground black pepper
  • 1 roasted garlic clove
  • ½ cup chopped arugula
  • 5-10 basil leaves

Combine all ingredients into NutriBullet and Blast.

*Add water based on desired consistency Store Dressing in a glass jar or container. Store in refrigerator and enjoy for up to 2 months!
