Perfect Pumpkin Pie

Perfect Pumpkin Pie

Ingredients

Crust

  • 1 cup coconut flakes
  • 1/4 cup oats
  • 3 1/2 tbsp. coconut oil
  • 2 tsp. raw, organic honey

Extract coconut and oats in your NutriBullet.

Mix in other ingredients by hand and combine until they form a dough - press into small tin pie pan.

Filling

  • 1 cup pumpkin puree
  • 1 egg
  • 1 tsp. raw, organic honey
  • 1 tsp. vanilla extract
  • 1/4 cup almond milk
  • 1 tsp. pumpkin spice

Extract all ingredients together in your Tall Cup - pour onto your crust.

Bake at 425 degrees Fahrenheit for 10 minutes, then turn down oven to 350 and continue to bake for another 45 minutes.

Sounds and looks wonderful. I will double recipe and pour into an 8" pie tin. Maybe covering the pie with foil the last 15 minutes of baking will prevent a burned crust. Thank you Sarah.

looks like you cooked it to long or temp was to high. Should cover the edge of pie with Foil Towards the end of cooking process.

I know! Hope it's a personal size, not cut into 6, lol. Wish she had answered this for you before. I'm voting on 1-2 serving, as the ingredients aren't a lot different from what it really a one person blast. ;-)
