Selection Process

Cardamom is typically sold ground or whole. Try buying cardamom whole, crack it open and remove the pods, using just the seeds in your cooking. The seeds should be light green, white or brown and the skin should be thin and feel like paper. The greener the seed, the stronger the flavor!
