Don't be so quick to toss out the leafy green tops of carrots - they're actually loaded with essential vitamins and minerals! Carrot tops are an excellent source of potassium, which can help lower blood pressure and promote nerve and muscle functions. Although they have a slightly bitter taste, carrot greens provide your body with plenty of vitamin C, calcium, and magnesium.
Avoid using carrot tops that are yellow or wilted. Before preparing the greens, give them a thorough wash.
