Sometimes referred to by their French name, haricot vert, green beans are a versatile veggie. In the same family as pinto beans, black beans and kidney beans, these little guys are the only ones that are typically eaten fresh.

Selection Process

Green beans are at their sweetest and least expensive during the summer through early fall months. Look for beans that are bright green in color and are very firm to the touch. Always go for the organic option. Also try purchasing frozen green beans; frozen green beans retain their nutrient content for up to 6 months in the freezer.
