This vibrantly red chicory is often confused for the more popular red cabbage, but don't be fooled! Radicchio's flavor is bold and bitter, its leaves tender and waxy, and although we love red cabbage, radicchio is quite the sophisticated little veggie! Selection Process

Look for firm heads of radicchio of a vivid magento color. Darker heads have probably been stored past their prime. Always opt for organic when possible.
