Roma tomatoes, also known as plum tomatoes, probably aren't your go-to option for vegetable juicing, but they are an incredible fruit, nonetheless! They're actually perfect for creating rich tomato sauces, as they boil down faster than larger beefsteak tomatoes and have more flesh and less juice than their other, more common counterparts. They're also packed with nutrients like lycopene, which studies have shown helps ward off certain types of cancers. They're also loaded with vitamins A and C, important antioxidants that protect cells from free radical damage.
Look for roma tomatoes that are bright red and free of any bruises or blemishes. Juicier tomatoes are denser, while unripe tomatoes can feel too light.
