I would prefer to use fresh fruit, or secondly frozen, but can you use canned fruit like pineapple or peaches if you drain them? Thanks!
There's no doubt that the canning process will see some vitamins and minerals lost, but, assuming you do not buy sweetened products (for example those canned in syrups), you may find them to be an adequate (temporary) solution. All you need to do is make sure you check the ingredients list on the label. If it's pineapple you're after, go for the pineapple in natural pineapple juice only - you don't want those that include things like preservatives or have added sugar.
