WOW! I just made this today and was shocked at how much it actually tastes like there is cheese in it. As I was preparing it I kept thinking I missed the cheese, but there is none.
A clever chef figured out how to make a vegan dish taste like cheese.
Made the Creamy Broccoli ... too bland.
Made the Ratatoulle and it was too much work for okay taste, but it tasted better than the Creamy Broccoli.
The David Wolfe's Root Soup has a strange flavor, but the ingredients are so healthy I will add it to repertoire.
So now the definite winners, so far, are Cheesy Potato, Spicy Tomato and Black Bean Soups.
BTW, I like to take shortcuts, if I can and there is a huge one on the Cheesy potato.
Take the potato and microwave it for 4 minutes and sauté the diced garlic in olive oil for a few minutes, while the potato is cooking. Forget the Tempeh (I don't even know what that is) and simply toss in the soy sauce and syrup in with the other stuff and let the machine rip. I know it says to soak the cashews for 4 hours, but just don't have the time and it turned out okay.
