I am the same way. I start gradual. If I change my diet and exercise program dramatically, I simply won't stick with it. Start with the items you know you like and add small amounts of veggies, then gradually begin adding more. My philosophy is, any amount of change is a move forward - don't expect to be drinking a greens blast right off the bat. Even if you start with just half a carrot and the rest all fruits, that's better than no carrot at all. Good luck and stick with it!
