Hi - Thanks in advance for answering this:  This particular recipe calls for 1/4 each of lemon, lime and grapefruit.  Some recipes I notice say to peel and other say to leave skin on.  When it is not indicated in this (or other) recipes what is the best way to proceed?  I know peel will add bitterness but maybe sometimes that is the point, or there may be properties in the peel that are essential.

I never peel ginger or turmeric, but I do always peel citrus fruits or leave a small portion of the rind as long as it is organic and I washed it well. There are essential oils in the rind that benefit overall health. We always say the bitter the better!
