Nutri-Bullet French Toast!

We had a snow day yesterday....which in my world is another word for time to experiment in the kitchen! My kids love French toast. And I like making it for them because I can sneak in protein, other nutrients and lots of flavor. I find "healthy" French toast to be a great breakfast before my son's hockey game or my daughters swim meets! Try this and tell me what you think! Perhaps we can come up with a couple variations.

Ingredients:

6 slices Whole grain, high protein bread

1 cup Boxed Egg Whites

1 tsp Cinnamon

1 tsp vanilla extract

1 cup non fat milk

1/4 cup canned pumpkin

1 tbsp pumpkin pie spice

agave nectar (as a replacement for syrup)

Directions: Combine Egg whites, non fat milk, 1 tsp Cinnamon, 1 tsp vanilla extract, 1 cup non fat milk, 1/4 cup canned pumpkin, and 1 tbsp pumpkin pie spice in NutriBullet and Blast. Pour into shallow dish. Dip bread into mixture until moist and place on heated and oiled griddle. Flip once after one side is browned. Serve hot and top with agave nectar.

I'm drooling!! That sounds so good!!
I loooove french toast and happen to have some canned pumpkin still! Definitely will have to try this! And find some more recipes for pumpkin smoothies!
