Last night I was craving something warm, was out of fresh tomatoes (remember I live in the middle of nowhere), so I blasted up two cans of diced tomatoes with basil and oregano, threw in a couple canned roased peppers and warmed it. Well, that hit the spot!
Today I'll get to civilization and stock up on fresh produce, but I didn't feel too guilty (can one even have "canned vegetable guilt"? 8-)), since these canned goods were not packed with sugar or preservatives except for salt.

I dont' have exact measurements since I was going by taste and texture, but those are the ingredients!
