Do you have any flavorful recipe suggestions to help encourage elderly people to consume more?

I am looking for recipes as a caregiver of someone with Alzheimer's. A recurring problem is encouraging them to eat.  I combine favorite flavors such as banana or chocolate with fruits and vegetables with Ensure or Boost.  I would love suggestions on combinations focusing on flavor and health benefits for people who eat only a small range of foods. I can hide the color by using opaque glasses. The texture is also a factor.

Spinach is very easy to disguise as it has a very mild flavor. Microgreens are a high nutrient option that do not have a strong flavor. Here are 2 recipes that we used on the UNI project with teenagers that had a very picky palate. 1 cup spinach, 1/2 banana, 1/2 pear, 1/2 tsp cinnamon, ~2 inches of zucchini, 1 tbsp hemp seeds, 1-1.5 cups unsweetened almond milk. 1 cup kale or spinach, 1/2 banana, 1/2 small apple, 2 tbsp oats, 1 tbsp walnuts, 2-4 leaves fresh mint, 2 chunks cucumber, 1-1.5 cups of coconut water
