First of all avoid buying anything but organic almonds since they are all pasteurized and/or irradiated( Cold pasteurization). Since the 1970's this is now mandatory to cover up for sloppy farming practices. This ruins the nutritive value of almonds and even makes them possibly carcinogenic! Some almond producers are even using propylene oxide (approved by the EPA) despite a ruling by the USDA that it is a probable carcinogen.
The one exception is if your seller knows the source and can testify that the almonds are treated using a steam-heat pasteurization method. This technique also depletes nutrients, but has the clear benefit of not causing cancer in lab rats." I am in luck and can buy raw almonds from my local Food Co-op supplied by such a farm.
My recipe for Almond Milk is 1 cup of soaked almonds to 3-4 cups of water with a 1/2 tsp.of organic vanilla extract. I leave it "rough" and shake well before using. If you prefer to strain it through cheesecloth you can use the solids in any recipe. If the brown bits bother you, you can peel the almonds, but know that you are throwing away a rich source of anti-inflammatory, anti-HIV, and anti-cancer properties in the hulls.
