How about seeds? Are you able to tolerate seeds like pumpkin, sesame, chia, hemp, and sunflower? Those provide some of the same nutrients as nuts.
I hear you about not being able to do all veggies (I've got a bit of a sweet tooth!).
Maybe do veggies with the seeds and add a touch of low or fructose-free sweetener like Stevia?
I'm not sure how intolerant you may be, but if you can have low fructose fruits, that may help. Talk with your GI Dr. to see if this is right for your before trying.
Some lower fructose fruits include avocado, apricot, lemon, lime, blueberries, figs, grapefruit, strawberry, guava, nectarine, plum, and pineapple.
Over time, hopefully you're taste buds will adapt to the more bitter veggies and you'll be making your own V-8 like Blasts in no time :)
