Labored breathing from COPD requires extra calories so using high calorie ingredients like nuts, avocado, cold-pressed coconut oil, etc. will help boost the calorie intake.
Consume more protein (needs increase to about 1.2-1.5g/kg body weight per day) and a moderate amount of carbohydrates (limit all the sweets, soda, candy, starches, milk, and high sugar fruits). A high-protein diet with moderate carbohydrates is recommended to reduce carbon dioxide in the body. Increased carbohydrates in the diet can increase respirations, which can make eating more difficult. Replace the carbs with some healthy fats - this will also up your caloric intake. Healthy fats high in omega 3 include hemp seeds, flax seeds, chia seeds, walnuts, and cold-water fish like salmon and haddock and tuna.
Limit salt/sodium: Salt can cause fluid retention in your body, which can make it difficult to breathe. Some diuretic-like foods include:

Increase vitamin C-rich foods: strawberries, citrus, leafy greens, berries
Foods that are gas forming can cause abdominal bloating and discomfort. This can lead to displacement of the diaphragm, which will cause increased difficulty breathing (these include broccoli, Brussels sprouts, cabbage, asparagus, onion)
Choose high fiber foods - veggies, oats, grains, low sugar fruits, cooked legumes
A Blast Idea could be as follows:
1 cup spinach
1/2 cup strawberries
1/4 cup raw carrot
1 Tbsp hemp seeds
Handful of walnuts
1 Tsp cold-pressed coconut oil (or you can use 1 Tbsp shredded unsweetened coconut flakes)
Optional: a serving of plant-based protein powder
Coconut water (or regular filtered water) to the max line
