What MUST you peal before adding to a recipe?

Citurs ie Oranges, limes etc? Kiwi? pea pods? I do not see anything in my info about cleaning/pealing anything. Logically, I'd peel bananas and pomegranates things like that, I see seeds you should NOT eat but I'm asking about watermelon, cantaloupe, zucchini etc.
