Which is best to use, dry of fresh ginger?

The process of turning fresh into dried ginger does alter the nutritional benefits slightly (some compounds enhanced and others reduced), however not enough to where it makes a huge difference. Just remember that when using dried in a recipe that calls for fresh, cut the amount in half since the dried is more concentrated.
