What can I use as an alternative for coconut water?

Any liquid that is not carbonated or hot - and we also add not loaded with added sugar.
A few of my favorites include: unsweetened almond milk, vegetable juice, brewed and chilled green tea, coconut milk, hemp milk, rice milk, cashew milk, or any other plant-based milk you'd like.
