How do I know when kale has become inedible?

You will see signs that your kale has seen better days when the color turns to a light green, when it becomes wilted and limp or when it becomes slimy and smells funny.

It stays at its best for about 3-4 days, but if stored properly (only wash it right before you use it; don't cut off the stems; wrap in a paper towel and store in an airtight bag in the coldest part of the fridge) it can last for up to a week.
