Why does the oil in nut butter separate and rise to the top?

Without a stabilizing agent the oil separates; this is simply a natural process. I'm not quite sure the chemistry behind it. However, knowing that the only ingredient is the nut (and maybe some salt) ensures that you are eating the healthiest nut butter option...even if it is a pain to stir.
Once you stir it in, refrigerate it so it won't separate again.
