Some recipes call for 1/4 lemon. Is this a peeled quarter lemon or can I leave the peel on?

Lemon according to our extraction prep chart should be peeled before consuming. However, the peel contains a compound called d-limonene. It is a basic (versus an acidic) food that is high in vitamin C and fiber. While you may not want to include 1/4 of a lemon rind, you may consider 1/8th of one just to try. It is very fragrant from the oils in the rind.
