Can I use half a fruit today and the other half tomorrow?

Will the fruit be oxidized?

Yes. There are some fruits that oxidize and others that don't. Oxidation happens because it is exposed to oxygen. Fruits like orange, melons and berries are less likely to get the browning that you see. While you should prepare the fruits when you are ready to eat them, I am less likely to eat them so I prepare them in advance they should keep a few days. For apples and pears that do brown, I would either cut them when you are ready, freeze them so they do not oxidize that way or soak them in lemon juice and water.
