There are two types of cholesterol - dietary cholesterol that we eat in our foods and the cholesterol we have in our bodies. We are learning that one doesn't necessarily affect the other. I'm not sure which you are referring to. It is important to have cholesterol in our bodies as it provides certain benefits such as being a precursor to certain hormones. So, we don't want to remove all cholesterol, but we do want to manage it within a healthy range. Regarding dietary cholesterol. It is not an essential nutrient so we don't have to have it in our diet. If we do not eat it, our bodies will produce what is necessary for it to function.
