If it's true that nutritional value diminishes post picking, how much remains in these packages?

For fresh produce, the longer it sits, the more nutrients are lost. However, this happens at a slow pace and is enhanced once the fruit or veggie is cut and exposed to light and air (in addition to heat). The amount varies depending on what stage the produce is picked at, the conditions of transport, if it is frozen (freezing produce locks in the nutrients), etc.
