Can I use the greens on the beets? Should I only pick organic vegetables?

whole beet, what about chard do I use the whole thing and what about organic vs regular

You can absolutely use the greens on your beets. They are very nutritious.

Organic vegetables are great to limit the amount of pesticides however not all vegetables and fruit need to be organic. The Dirty Dozen guide will help you choose which types of fruits and vegetables contain more pesticides that you would want organic for.
