What is the maximize amount of water/liquid should I add that would hinder digestion and absorption of nutrients?

Adding water or any liquid does not dilute any nutrients that are being absorbed and digested. Liquid or water aid in digestion. The nutrients are not diluted if you added too much. If you only consumed water without additional food, there is an opportunity that you dilute the nutrient however it is not the case if you consume liquids with your food like in a smoothie.
