Directions

  • Preheat oven to 350 degrees.
  • Using the Slicer/Shredder attachment, slice the onion and all bell peppers into a bowl. In a large pan, add the avocado oil on medium heat. Add the onions, bell peppers, and seasonings and sauté for 4 minutes, or until they start to soften and become golden brown. Add the garlic and sauté for an additional 2 minutes.
  • Add the shrimp, tomatoes, and lime juice and increase the heat to medium-high. Allow the shrimp to cook until pink, and the sauce to slightly reduce, about 4 minutes. When cooked, allow the mixture to cool slightly before assembling taquitos. Toss in cilantro and adjust seasonings as desired.
  • Place tortillas into the microwave for 45 seconds so they become flexible. Take one tortilla at a time and place about 1/3 C of filling in the center. Top with a sprinkle of cheese and roll tightly to form the taquito. Place each one seam side down onto a greased parchment paper lined baking sheet. Two baking sheets required.
  • Bake for 15-20 minutes or until golden brown! Serve with guacamole and salsa.

Notes

  • For a vegan option, swap the shrimp for extra firm tofu and use non-dairy cheese!
