- ½ Small Onion
- 4 Large Tomatoes
- 1 Sprig Thyme

Roast tomatoes in a shallow pan. Preheat oven to 350 degrees and add halved tomatoes, drizzled with olive oil and sprinkled with salt and pepper. Roast until skin wrinkles and begins to brown, about an hour.
