Directions

  • Roast tomatoes in a shallow pan. Preheat oven to 350 degrees and add halved tomatoes, drizzled with olive oil and sprinkled with salt and pepper. Roast until skin wrinkles and begins to brown, about an hour.
  • Meanwhile, add olive oil to saucepan and cook chopped onion until caramelized, about 5 minutes.
  • Once cooled, add your tomatoes, onion, water or vegetable broth, thyme, parsley and Spice Blend to your NutriBullet Rx Soup Pitcher and heat on 7-Minute Heated Cycle.

Notes

  • For a richer soup, use low-sodium vegetable or chicken broth or stock instead of water.

I made it without the spice blend because I didn't have any. I did add a little roasted garlic (roasted a clove with the tomatoes). Also I didn't have any large tomatoes but used a variety of small orange, yellow, purple and yellow tomatoes. Came out delish!

Can you make this without the RX and just blend everything together and heat it?

For the Tomato White Bean Soup they add this note. Don't have an Rx? Follow the same steps, but extract in your original NutriBullet or NutriBullet PRO and heat over the stove for about 7 minutes, or until warmed through.

Hi ninantn, there isn't another product out there that has all the same health benefits, but you can use buillon to imitate the flavor.
