- 1 ½ Cups Hemp Hearts
- 1 ½ Cups Dried Unsweetened Coconut, shredded (reserve 1 cup to roll truffles in)
- 1 Cup Dried Unsweetened Mango, soaked in hot water for 15 minutes
- 2 Tablespoons Organic Almond Butter
- 3 Medjool Dates, pitted
After soaking for 15 minutes, drain mango from water and place into Nutribullet Tall Cup along with hemp hearts, 1/2 cup shredded coconut, almond butter, and dates.
Extract in 10 to 15-second increments. In between pulses, use a rubber spatula to scrape down the sides until ingredients are fully combined. The consistency should be similar to a thick cookie dough.
Using a mini scoop, make round dollops and roll immediately in dry shredded coconut, forming into a ball shape.
