These vegan oatmeal pancakes are thick and delicious, and they taste like morning oatmeal but in the form of a pancake! Better yet, this five-ingredient recipe is healthy, gluten free, vegan, and super simple to make! If you’re trying to incorporate more oats into your diet but are tired of boring bowls of oatmeal, then this recipe is for you. Top it all off with fresh fruits, whipped cream, chocolate chips, or pure maple syrup!
- 1 Cup Gluten-Free Old Fashioned Rolled Oats
Baking Powder (gluten-free)
- 1 Pinch Salt
- ⅔ Cup Unsweetened Vanilla Almond Milk
Heat a nonstick skillet over medium-high heat and spray with cooking spray.
In your Short Cup, add all of the ingredients. Blend until completely smooth. The longer it sits, the thicker the batter gets, so don't let it sit for too long.
Scoop desired size of pancake batter onto the skillet and cook until the edges are dry. Flip and cook the other side.
Serve with fresh fruit, whipped cream, chocolate chips, and/or pure maple syrup.
