Begin arranging your parfaits by draining the liquid out of the mandarin orange can and arranging about 10-12 mandarin orange slices into the bottom of your parfait glass. Adjust based on the size of your glass.

Slice your pineapple sections and place on top of mandarin oranges in parfait glass.

Pour the entire can of coconut milk, honey and vanilla extract into your NutriBullet and blend until fluffy, creamy peaks form—almost like a mousse.

Spoon a dollop of whipped coconut cream mixture onto the top of each fruit parfait.

Lightly sprinkle each parfait with a little bit of pumpkin pie spice.

Notes
- Put the can of coconut milk in the fridge for at least 24 hours. 48 hours is ideal. Room temp coconut milk will not whip up like whipped cream topping.
