Are "Greens" pretty much interchangeable? Instead of Collard Greens, can you use that leafy spring mix stuff? Just curious?

Yes! Go ahead and use whichever greens you like best. You could substitute the collard greens for spinach, kale, spring mix, etc.
You could do without the ice if all your fruits/vegetables were frozen. I make all my smoothies with frozen fruit and veggies and coconut water. More nutrient dense that way. =)
