  • This recipe is best made the day before. In a skillet over medium-high heat, warm the olive oil and sauté the garlic, onion, and ginger for about 3-5 minutes.
  • Add the turmeric, red pepper flakes, chickpeas, salt, and pepper and cook for another 8-10 minutes. Remove the skillet from the heat and put the ingredients in a sealed container, allowing to cool overnight.
  • When cooled the next day, combine 1 cup of the cooled spiced chickpea mixture into your Tall Cup, along with 1/3 cup coconut cream, and 1 cup vegetable broth. Pulse for about 30 seconds, allowing the chickpeas to break up.
  • Pour the contents of the soup into a microwave-safe bowl and heat to warm-up. You can also heat the soup up in a small pot.
  • Garnish with any remaining chickpeas, greens, and sprinkle with paprika, if desired.
  • Enjoy!


  • The cream that rises to the top of a can of coconut milk is coconut cream. For this recipe, you'll need 1/3 cup of coconut cream from 1 can of full-fat coconut milk.
