Preheat oven to 400F.
Over medium-high heat, sauté the diced bell peppers and spinach for about 5 minutes. Set aside to cool.
In the RX Pitcher, combine eight eggs, ½ cup of heavy cream, salt and pepper, two tablespoons of the completely cooled bell peppers, and ¼ cup of the shredded cheese, and blend.
Divide the contents in a prepared muffin tin. Top each egg mixture with the remaining bell peppers and shredded cheese.
Bake at 400 F for 10 to 12 minutes, or until the eggs are fully cooked and puffed up.
