Classic Roasted Carrot Soup

Classic Roasted Carrot Soup

Roasted carrots are one of the most comforting foods around, except for maybe a bowl of warm, hearty soup! Why not put these two together for a filling and luscious lunch or dinner soup that will warm you from the inside out?

Yes, carrots can make for an amazing side dish or main course, but they’re one of only a few foods that actually benefits from cooking. Cooking makes their protective antioxidants (especially beta-carotene) easier for our bodies to absorb, helping safeguard us against toxins and free radical damage. Cooking also enhances their taste, helping us enjoy those nutrients all the more!

Try roasted carrots in this easy-to-make soup that you and the whole family will enjoy.
