Directions

  • Peel the sweet potato and use the Veggie Bullet shredder attachment to shred the sweet potato into a bowl.
  • Squeeze excess water out of potatoes using a kitchen towel or cheesecloth. Toss grated potato with some salt, pepper, and flour. Press some of the mixture with your fingers and if it feels too wet, add 1 tbsp. more flour at a time.
  • Next, heat a 8-10 inch fry pan to medium heat, add 2 tablespoons of olive oil and pour the potatoes into the pan.
  • Use a spatula or spoon to arrange potatoes into a large “pancake”, and press down to ensure maximum contact with heated pan.
  • Cook for about 10-12 minutes, then slowly and carefully flip the potato pancake over and cook for another 10-12 minutes, depending on desired level of crispiness.
  • Place pancake on cutting board and allow to cool to room temperature.
  • While pancake is cooling, combine cheese, water, garlic, chives, and lemon zest in the Veggie Bullet blender attachment and pulse until smooth.
  • Place into a small bowl. Next, use the slicer attachment to slice the red onion.
  • Once pancake is cooled, evenly spread cheese mixture onto the sweet potato pancake pizza.
  • Layer with the slices of smoked salmon and top with capers and red onion.
  • Cut into 4-6 wedges and serve with slices of lemon for an extra citrusy, anti-inflammatory zing.

Notes

  • Don't have a Veggie Bullet? You can use a hand spiralizer to spiralize your fruits and veggies, a food processor to shred and chop, or a knife and cutting board to slice. Just expect to add additional prep time and use more counter space.
